I don't think it would work as well if it had been done in green or blue. Yellow is just close enough to flesh tones to be disturbing, but not so close that viewers get hung up on verisimilitude.
Yellow also shows a greater range of values, from almost white highlights to warm shadows, that helps this work. If you converted the image to black and white, there would still be a lot of dynamic range.
That is quite fine. Disturbing even.
